AUS-MEAT TRAINING INFORMATION

 

Training and Advisory Services 

AUS-MEAT Limited provides training services to deliver skills and competencies with the framework of the Industry accreditation standards. AUS-MEAT is also a Registered Training Organisation (RTO) providing a number of training courses that result in qualifications and statements of attainment that are recognised and accepted by industry and other RTO's throughout Australia. As a Registered Training Organisation, AUS-MEAT Limited has agreed to operate within the Principles and Standards of the Australian Qualifications Framework (AQTF 2007 Essential Standards for Registration)

AUS-MEAT delivers both Accredited and Non Accredited courses. Accredited courses are recognised within the Meat Industry Training Package - MTM00 and such courses provide units for the completion of various Meat processing Certificate qualifications. Non Accredited courses provide Industry qualifications, skills and knowledge for Meat processing.

The primary objective is to maintain the standard of the industry skill base by delivering accredited training courses to comply with National Accreditation Requirements. The five methods of delivering the training ensures compliance with RTO standards. In recognition of the value of electronic Learning (e-learning), the Beef Specification Self Learning CD was developed.

AUS-MEAT Training will ensure that teaching staff are not only suitably qualified but are also sensitive to the cultural and learning needs of trainees, and will provide training for it's staff as required.

 

Beef Specification Self Learning CD

The AIM of the Beef Specification Self Learning CD is to prepare the operator to be an AUS-MEAT Standards Officer in the Beef boning room.

The OBJECTIVES of the self Learning course the operator should be able to:

  • Check a beef product against a written specification
  • Identify whether or not a product complies with the specification
  • Record accurately the differences, if any, between a beef product and its specification.

The operator must then be able to:

  • Correctly spell product name of at least 300 products
  • Describe the anatomical cutting line points.
  • Recognise correct/incorrect cutting lines.
  • Identify what additional preparation may/may not be required for the product to be trimmed to specification.
  • Identify points of specification allowed for the product
  • Measure the points of specification accurately (fat depth/ length of rib/length of meat tail from eye muscle where required
  • Identify and describe objectively and product defects.

 

The Beef Specification Self Learning CD is a recognised learning tool for certificate (iii) in Meat Processing (General) - Item: MTMP3100A.

What Is MSAMSA Logo

MSA beef is a tenderness guaranteed grading program. All MSA graded beef is labelled with a guaranteed grade and recommended cooking method to identify beef eating quality according to consumers.

All participants in the program are licensed to use the Trademark and certify products via an approved Quality Management System in accordance with the MSA Standards Manual.

Effective August 1 2009 AUSMEAT in conjunction with MSA will deliver all beef processor training modules.

Training

MSA training ensures participants to have a solid understanding of the fundamentals of the MSA system in order to allow the system to operate to its full potential with maximum integrity.

MSA Grading


MSA certified graders collate information from the producer, supervise processing standards and collect individual carcase attributes using a uniform set of standards.

Individual beef carcase attributes collected include breed content, meat colour, fat depth, marbling, maturity and ultimate pH. Results are allocated to the carcase including individual primal quality grades, days of ageing required and recommended cooking method.
